At TRAVAGLINI we believe that the vinification process and healthy
grapes are the starting point for a really high quality wine. In
the wine cellar, the search for quality is in human hands. and at
TRAVAGLINI, a great deal has been invested in research and innovative
technology: an analysis of the must, fermentation in stainless steel
tanks with controlled temperatures and micro-oxygenation, thus obtaining
a natural vinification process which is controlled on a technological
level.

There is a marriage of modern
technology and the tradition of wood when it comes to maturing the
Gattinara wine produced in this way: the Slovenia oak barrels closely
guard and mature this “nectar” (as laid down in the specifications,
the Gattinara Selezione and the Tre Vigne are kept in this way for
two years and the Riserva for at least 3 years) which will then become
Gattinara DOCG.

Obviously there could be
no question of putting a great wine into an ordinary bottle. So,
even as long ago as 1959, Giancarlo Travaglini had come up with
a work of art: a special bottle in which the wine could be served
on the most prestigious tables in the world, so that, during the
“decanting” or “carafing”, we can retain
the natural deposit that can produce a great Gattinara which has
spent years maturing. An elegant bottle especially designed for
keeping and ageing in cellars.
